Donna’s Potato Soup
INGREDIENTS:
· 6 potatoes, peeled and chopped
· ¼ lb. bacon
· 1 onion, chopped
· 3 tbsp. flour
· 4 cups cold milk
· ½ tsp. salt
· 1 tsp. pepper
· 1 onion, chopped
· 2 cups sharp cheddar cheese, shredded
· ½ cup bleu cheese, crumbled (you can pick any cheese, make it a flavorful one)
DIRECTIONS:
1. Place potatoes in cold salted water
2. Bring to boil and boil for 10 minutes or until fork tender
3. Drain and set to side
4. Fry bacon
5. Remove the bacon from pan and put 1 tbsp. bacon fat into a large pot
6. Sauté onion in remainder of bacon fat
7. Add flour to bacon fat in pot and mix together to make a roux
8. Add milk slowly to roux stirring continuously over medium high heat for 3 minutes or until it begins to thicken
9. Add cheese and continue stirring until cheese is melted and incorporated
10. Add crumbled bacon, potatoes, and onions
11. Reduce heat to simmer for 30 minutes
Garnish with sour cream, chives, raw chopped red onion or shredded cheese.
