Cheesy Bacon Breakfast Casserole Breakfast Casserole
INGREDIENTS:
· 1 pound sliced bacon, diced
· 1 medium sweet onion, chopped
· 4 large potatoes, shredded
· 6 eggs
· 2 cups shredded Cheddar cheese
· 1 ½ cups ricotta cheese
· 1 ¼ cups shredded Swiss cheese
DIRECTIONS:
1. Preheat oven to 350ºF
2. In a large skillet cook bacon, onion and shredded potatoes then drain
3. Put into 9x13 lightly greased casserole or baking dish
4. Beat together eggs and cheeses
5. Pour over potatoes
6. Bake uncovered for 40-50 minutes
