Brussel Sprouts with Balsamic Vinegar Glaze

​Ingredients:
  • 1 pound of brussel sprouts, halved and stem removed
  • 2 TBS olive oil
  • Salt and Pepper
  • 1 cup of balsamic vinegar
  • ¼ cup bacon, diced[i]
Directions:
  1. Preheat oven to 425º F
  2. Toss Brussel sprouts in 2 TBS olive oil and salt and pepper
  3. Place on baking sheet
  4. Sprinkle bacon over sprouts
  5. Bake for about twenty minutes stirring or flipping once for even cooking and caramelization
  6. Pour vinegar into small saucepan
  7. Simmer over low heat until it reaches a syrupy consistency and coats a spoon. (Watch it closely, it may burn quickly).
  8. Remove Brussel sprouts from oven, toss in 1-2 TBS Balsamic Vinegar glaze
  9. Serve hot

Salmon Patties

Salmon Patties are an easy to prepare and healthy meal
If you're looking for an easy to make quick and healthy meal here it is.

Salmon Patties

Ingredients:
·         1 6 oz. can of skinless boneless salmon

·         1 TBS mustard or mayonnaise

·         1 small onion, chopped

·         1 stalk celery, chopped

·         2 eggs, beaten

·         ½ cup breadcrumbs

·         1 TBS Parsley, chopped (optional)

·         1 TBS oil

Directions:
1.       Drain Salmon,

2.       Sauté ½ the onion

3.       Combine salmon, mustard[1], onions, celery, eggs, breadcrumbs, and parsley in bowl

4.       Mix well

5.       Form patties

6.       Brown patties about 3-5 minutes per side, turning only once while cooking



[1] In lieu of mustard or mayonnaise use ½ the liquid from canned salmon

Lee’s Favorite Potato Soup

My beautiful friend Lee on her birthday
This potato soup recipe is one  I made up as I cooked it for my friend Lee at her house. It turned out delicious. This recipe will yield a large pot of perhaps 6 servings. It's an entire meal in one soup.


Ingredients:
  ·         2 cups Chicken or Vegetable Broth

·         3 Large Potatoes, peeled and diced  click here for an easy way to peel your potatoes while you par-boil

·         2 carrots, peeled and sliced

·         ½ onion, chopped

·         1 rib of celery, sliced

·         ½ cup mixed vegetables[1]

·         3 slices of bacon (or use ham)[2]

·         ¼ cup oil

·         ½ cup flour

·         2 cups milk (or 1 cup cream and 1 cup milk)

·         ½ cup sour cream

·         ¼ cup cheddar cheese, grated

·         ¼ cup parmesan cheese, grated

·         ¼ cup cream cheese, softened[3]

·         Your favorite seasonings (I suggest sage, celery seed, thyme, parsley, and a touch of cayenne)

·         Salt/pepper

Directions:
1.       Par-boil potatoes

2.       Add vegetables and potatoes to broth, and bring to boil

3.       Cover and turn heat to simmer

4.       Fry bacon in a large pot  over medium-high heat (for ham render some fat and dice the ham)

5.       Remove bacon from pan, crumble and set aside

6.       Add oil to bacon fat (to equal about ½ cup)

7.       Add flour and stir to make a roux

8.       Stir in milk and turn heat down to medium

9.       Stir in sour cream, and cheeses, stir until smooth

10.   Add seasonings

11.   Slowly stir in bacon, vegetables, potatoes, and broth

12.   Bring to boil over medium heat, stirring often

13.   Reduce to simmer for at least 1 hour



[1] Your choice, I used peas, corn, and lima beans


[2] Optional, if not using the fat from a meat increase oil to ½ cup


[3] Use any cheeses you wish, bleu cheese or feta works well

Donna’s Oven Baked “Fried” Chicken

This delicious "Fried" chicken is juicier and much easier, not to mention healthier than frying in oil.


Ingredients:
  ·      4 Chicken breasts, skinless and boneless (any cut of chicken is fine)

·         ½ cup Italian Dressing

·         ½ cup flour

·         ½ tsp poultry seasoning

·         1 egg

·         ¼ cup buttermilk

·         ½ cup Panko

·         Seasonings (chili powder, onion powder, garlic powder, oregano, dash of cayenne, salt/pepper)

Directions:
1.       Marinate chicken in Italian dressing for 1-2 hours

2.       Preheat oven to 400º F

3.       Mix flour with poultry seasoning and place on shallow plate

4.       Coat chicken with flour

5.       Whisk egg and buttermilk

6.       Coat chicken with egg mixture

7.       Add seasonings to Panko

8.       Dredge chicken in Panko

9.       Place on broiler pan or baking dish with rack

10.   Bake boneless chicken for 30 minutes, bone-in chicken  for 40 minutes or until juices run clear and internal temp is 165ºF

Country Fried Pork Loin Cubed Steak in Mushroom Gravy

This easy entrée recipe can use cubed pork, chicken, turkey, or beef. Prep is quick, simple, and foolproof. It’s great served with mashed potatoes and biscuits.

Ingredients:

  ·         About 1 lb pork loin cubed steak (any kind of cubed steak will do)

·         ½ cup flour

·         ½ cup bread crumbs

·         Thyme, Sage, and, Rosemary to equal about 1 tsp

·         1 egg, beaten

·         1 TBS canola oil

·         ½ onion, chopped

·         ½ cup mushrooms, sliced

·         1 Can condensed cream of mushroom soup

·         ¼ cup milk or water

·         ¼ to ½ cup sour cream (or water) for desired thickness

Directions:
1.       Preheat oven to 350º F

2.       Combine seasonings, flour and bread crumbs

3.       Coat steaks in egg

4.       Then coat steaks in bread crumb mix

5.       Heat oil in skillet

6.       Sauté onion for 1 minute

7.       Add mushrooms and sauté until onion is translucent, about 2 minutes

8.       Remove from skillet

9.       Add meat to same skillet

10.   Brown on each side for about 1 minute and 30 seconds

11.   Remove from skillet and place in baking dish

12.   Add mushrooms and onions back to skillet

13.   Turn heat down to low-medium

14.   Stir in soup, milk, and sour cream

15.   Pour mixture over steaks

16.   Bake for 45 minutes

Shrimp & Spinach Manicotti Rosa Alfredo

I wanted to make something a bit different for dinner than our usual fare. We love shrimp. I decided to lean toward Italian and made up this recipe.

Shrimp & Spinach Manicotti Rosa Alfredo

Ingredients

  ·         1 pound small shrimp, cleaned, peeled, with tail off

·         2 cups ricotta cheese

·         1 egg

·         1 ½ cups spinach, chopped

·         ½ cup onion, chopped or minced

·         1 cup Mozzarella cheese, shredded and divided

·         1  cup Parmesan cheese, shredded and divided

·         1 tsp garlic powder

·         Italian Seasonings

·         Salt and Pepper

·         A package (8 oz.) Manicotti

·         1 cup diced tomatoes

·         1 cup water

·         2 cups Alfredo Sauce

Directions 

 1.       Preheat oven to 350ºF

2.       In a large bowl combine shrimp, ricotta, egg, spinach, garlic powder, onion, half the cheese, seasonings, and salt and pepper. Mix well

3.       Fill Manicotti with ricotta mixture

4.       Place tomato juice and water on bottom of baking dish, top with filled manicotti

5.       Put tomatoes over manicotti

6.       Cover with Alfredo Sauce

7.       Bake for 45 minutes

8.       Remove from oven, top with remaining cheese

9.       Return to oven and bake an additional 10 minutes

Grandpa's Favorite Swiss Chicken

This is an easy and quick to prepare pressure cooker recipe given to me by my cousin. Grandpa told her this was his favorite chicken.


Grandpa’s Favorite Swiss Chicken

INGREDIENTS:

·         ¼ cup flour

·         1 lb. chicken

·         8 oz. tomato sauce

·         8 oz. diced tomatoes

·         Salt/Pepper to taste

DIRECTIONS:

1.    Mix flour with salt and pepper and other seasonings to taste

2.   Coat chicken pieces in seasoned flour

3.   Place into pressure cooker cover with diced tomatoes and tomato sauce

4.   Cover and seal cooker, cook for 10 minutes over med/high heat

*You can layer the chicken on top of small potatoes in the pressure cooker and add 3 minutes to cook time

·         2 cups rice, cooked

·         1 can black beans

·         1 can Mexi-corn

1.    Brown chicken in large skillet

Easy Honey Garlic Chicken

I love Honey Garlic Chicken and making it is easier than you might imagine. Here's my recipe.



Donna’s Easy Honey Garlic Chicken


INGREDIENTS:

·         1 lb. chicken cut into bite size pieces

·         ½ cup flour

·         2 tbsp. garlic, minced

·         ¼ cup honey

·         Salt and Pepper to taste

DIRECTIONS:

1.    Coat chicken in flour

2.   Sauté garlic

3.   Lower heat to medium-high and add chicken

4.   Add honey

5.   Cook stirring often until chicken is thoroughly cooked about 5-8 minutes

Serve over Lo Mein or Rice

Slow Cooker Easy Cashew Chicken

Do you want a super easy way to have Cashew Chicken? You can make it in your slow cooker with this recipe.

Slow Cooker Easy Cashew Chicken

Ingredients:

• ½ - 1 pound chicken, cut into bite sized pieces

• 1 cup celery, finely diced

• 1 small onion finely diced

• 1 can cream of chicken soup

• 2 cups bean sprouts

• 1 tsp. soy sauce

• 1 cup cashews, coarsely chopped

Directions:

1.       Combine all ingredients in slow cooker

2.       Cook on low for 6-8 hours (or high for 3-4 hours)

Serve over Chow Mein noodles or rice.
