This recipe is truly is easy and doesn't require any cooking.



Easy as Pie Lemon Pie


Ingredients:
  ·         1 can frozen lemonade (thawed)

·         14 oz. can condensed milk

·         9 oz. whipped cream

·         graham cracker pie crust

Directions:  

1.      Mix thawed lemonade with condensed milk and whipped cream.

2.      Pour into a graham cracker crust, chill for 1 hour.

Day after Thanksgiving Turkey Pumpkin Soup

I hate to wast the turkey bones and other leftovers after Thanksgiving. I also don't want a heavy meal the next day. This soup recipe utilizes the bones and some of the leftovers to make a refreshing soup

Day after Thanksgiving Turkey Pumpkin Soup

Ingredients: 
 Broth[i] 

  ·         Turkey bones

·         ¼ cup turkey drippings (optional)

·         1 onion, chopped

·         1 carrot

·         1 stalk celery

·         Herbs of choice

Soup
  ·         About ½ pound leftover turkey, cut into small pieces

·         Leftover pumpkin pie filling

·         Pumpkin to supplement pie filling to about 2 cups (optional but recommended).

·         1 cup leftover vegetables

·         1 sweet potato, cubed (or 1 cup leftover sweet potatoes)

·         1 clove garlic, minced

·         ½ tsp. hot sauce

Directions: Broth 1.       Put turkey bones in large pot with water, drippings, onion, carrot, and celery

2.       Bring to boil

3.       Reduce to simmer for 1 hour

4.       Drain broth to remove bones and other ingredients

Soup 5.       Put broth in large pot

6.       Add potato

7.       Bring to boil for 5 minutes

8.       Reduce heat to simmer

9.       Add turkey, pumpkin, vegetables, garlic, and hot sauce

10.   If you are not using leftovers, add herbs or seasoning of choice

11.   Simmer for 1 hour



[i] You may use chicken or vegetable broth in lieu of making turkey broth

Pumpkin Cheesecake

Although Pumpkin pie is the tradition, at my house the preference is for pumpkin cheesecake. This recipe is super easy.

Pumpkin Cheesecake
  Ingredients:

·         15 oz can of pumpkin

·         8 oz package cream cheese, softened

·         1/2 cup + 2 Tbs brown sugar, packed

·         1 tsp pumpkin pie spice

·         2 large eggs beaten slightly

·         1 graham cracker 9 inch pie crust or gingersnap pie crust

DIRECTIONS:

·         Preheat oven to 350ºF

·         In large bowl mix cream cheese and brown sugar on medium speed with electric mixer

·         Beat in pumpkin and pumpkin spice

·         Stir in eggs by hand

·         Pour mixture into pie crust

·         Bake for one hour

·         Let cool in oven for 30 minutes

·         Remove from oven and cool an additional 15 minutes

Squash Casserole

This time of year green bean casserole is the casserole we think of most, but there are all kinds of vegetable casseroles to try.  Here is a recipe for one of my favorites. 



Squash Casserole


 

INGREDIENTS:

·         8-10 squash, chopped

·         1 onion, chopped

·         1 can cream of chicken soup

·         1 can cream of mushroom soup

·         8 oz. cheddar cheese, grated

·         1 cup sour cream

·         ½ cup milk

·         Salt and pepper

·         ½ cup butter cracker crumbs

 

DIRECTIONS:

1.    Preheat oven to 350ºF

2.   Boil squash for 5-10 minutes

3.   Drain and mash in colander to remove all water

4.   Mix all ingredients except cracker crumbs well

5.   Put into buttered casserole dish

6.   Sprinkle cracker crumbs over the top

7.   Bake for 35 minutes

Florida Orange Cake

My Nana Eva Boam lived in England but she loved to visit us in Florida and she always took advantage of the orange and grapefruit trees in our back yard.
While the majority of the country freezes during winter, in Florida we are still soaking up the sunshine. How about a touch that sunshine in your dessert? Try this simple cake recipe.


Florida Orange Cake

INGREDIENTS:

Cake:

·         1 package yellow cake mix

·         1 cup orange juice

·         3 eggs

·         1/3 cup water

·         1/3 cup vegetable oil

·         Frosting:

·         1 (8 ounce) package cream cheese, softened

·         1/4 cup butter, softened

·         1 tablespoon orange marmalade

·         3 cups confectioners' sugar

 

 

DIRECTIONS:

Cake:

 

1.    Preheat oven to 350ºF

2.   In a large mixing bowl, combine the dry cake mix, orange juice, eggs, water and oil

3.   Beat on low speed for 30 seconds

4.   Beat on medium for 2 minutes

5.   Pour into a greased 13-in. x 9-in. x 2-in. baking pan

6.   Bake for 30-35 minutes or until a toothpick inserted near the center comes out clean

7.   Cool on a wire rack

 

Frosting:

1.    In a small mixing bowl, beat the cream cheese and butter until smooth

2.   Beat in orange marmalade and confectioners' sugar

3.   Spread over cake

Cauliflower Bread

Are you looking for a gluten-free bread alternative?  This recipe is just the thing. It is good for you, goes well with dinner and tastes great.


Cauliflower Bread


Ingredients: 
  •1 large head of cauliflower 
•2 cloves garlic, grated or minced
•2 large eggs, lightly beaten
•4 oz low fat mozzarella cheese 
•1/2 teaspoon onion powder
•salt 
•pepper



Directions:
•Preheat oven to 450ºF.
•Chop the cauliflower into chunks and place into microwave for about 5 minutes or until soft
•Place the cauliflower into a food processor and blend until it's a mashed potato texture
•In a medium bowl, stir together cauliflower, eggs, cheese, and seasonings
•Lightly spray a baking pan with spray oil and coat with the mixture (about 1/2 inch thick)
•Bake at 450º for 20-25 minutes or until the top starts to brown
•Add additional cheese to the top and enjoy!

Granny's Pork Chops

This is such an easy recipe and gives you truly delicious pork chops.

Grandma's Pork Chops

 

Ingredients:

  ·         1 lb Pork Chops

·         ½ cup orange juice

·         1 tsp salt/pepper

·         ¼ cup brown sugar

Directions

1.      Preheat oven to 350º

2.      Place pork chops in large baking dish

3.      Mix remaining ingredients

4.      Pour over chops

5.      bake for 1 hour

My personal twist is to cover the dish with aluminium foil and decrease the cook time to 40 minutes. The chops will baste themselves throughout the time in the oven.

Camarones y Langosta (Shrimp & Lobster)

This delicious seafood dinner is so much easier than you imagine. perfect for a romantic meal for two or that dinner party for twelve.



Camarones y Langosta (Shrimp & Lobster)


Ingredients:
  ·         2 pounds raw shrimp, peeled and deveined.

·         1 pound scampi shrimp or seafood of choice.

·         2 Lobster tails

·         ½ cup sliced green olives

·         2 cups fish or shrimp stock

·         2 tomatoes, (to make about 2 cups) diced, or tomato sauce

·         ¼ cup tomato paste

·         Sazon or Adobo to taste

·         Garlic to taste, chopped

·         1 onion, chopped

·         ½ cup sweet peppers, chopped


Directions:
1.       Sauté onion, garlic and sweet peppers in large pot until onions are translucent.

2.       Add stock, remaining seasonings, and tomatoes, to pot, bring to boil.

3.       Add seafood and olives

4.       Simmer for twenty minutes

Granny's Ice Box Fruit Cake

You can still make dessert even if you can't find time to use the oven. 
Granny used to make an ice box fruit cake. This is the recipe that was with her others. 

Ice Box Fruit Cake

  Ingredients:


·         1 box graham crackers crushed

·         2 cups seedless raisins

·         2 cups pecans

·         1 cup sweetened cherries

·         1 cup walnut

·         1 can sweetened condensed milk

·         1 cup shredded coconut

·         2 cups marshmallows

Directions:
1.      cut up fruit in small pieces

2.      mix fruit, graham crackers and nuts in bowl.

3.      melt marshmallows with milk

4.      pour fruit, nut, cracker mixture into marshmallows and stir together

5.      the mixture will be difficult to stir, DO NOT add more water or milk to make it easier.

6.      put mixture into loaf pan and chill for 24 hours

Curry Wings

Curry Chicken Wings

INGREDIENTS:

·         3 lbs. chicken wings

·         1 tbsp. olive oil

·         1 large onion chopped

·         1 large green pepper chopped

·         2 tbsp. curry powder (adjust to taste a little goes a long way)

DIRECTIONS:

1.    In large skillet or cooking pot sauté onions and green peppers

2.   Turn heat to medium

3.   Add wings

4.   Add curry powder and stir together

5.   Cook over medium heat, stirring often for 10 minutes

6.   Cover, turn to simmer and cook for 1-2 hours stirring occasionally
