Salmon Patties

Salmon Patties are an easy to prepare and healthy meal
If you're looking for an easy to make quick and healthy meal here it is.

Salmon Patties

Ingredients:
·         1 6 oz. can of skinless boneless salmon

·         1 TBS mustard or mayonnaise

·         1 small onion, chopped

·         1 stalk celery, chopped

·         2 eggs, beaten

·         ½ cup breadcrumbs

·         1 TBS Parsley, chopped (optional)

·         1 TBS oil

Directions:
1.       Drain Salmon,

2.       Sauté ½ the onion

3.       Combine salmon, mustard[1], onions, celery, eggs, breadcrumbs, and parsley in bowl

4.       Mix well

5.       Form patties

6.       Brown patties about 3-5 minutes per side, turning only once while cooking



[1] In lieu of mustard or mayonnaise use ½ the liquid from canned salmon

Country Fried Pork Loin Cubed Steak in Mushroom Gravy

This easy entrée recipe can use cubed pork, chicken, turkey, or beef. Prep is quick, simple, and foolproof. It’s great served with mashed potatoes and biscuits.

Ingredients:

  ·         About 1 lb pork loin cubed steak (any kind of cubed steak will do)

·         ½ cup flour

·         ½ cup bread crumbs

·         Thyme, Sage, and, Rosemary to equal about 1 tsp

·         1 egg, beaten

·         1 TBS canola oil

·         ½ onion, chopped

·         ½ cup mushrooms, sliced

·         1 Can condensed cream of mushroom soup

·         ¼ cup milk or water

·         ¼ to ½ cup sour cream (or water) for desired thickness

Directions:
1.       Preheat oven to 350º F

2.       Combine seasonings, flour and bread crumbs

3.       Coat steaks in egg

4.       Then coat steaks in bread crumb mix

5.       Heat oil in skillet

6.       Sauté onion for 1 minute

7.       Add mushrooms and sauté until onion is translucent, about 2 minutes

8.       Remove from skillet

9.       Add meat to same skillet

10.   Brown on each side for about 1 minute and 30 seconds

11.   Remove from skillet and place in baking dish

12.   Add mushrooms and onions back to skillet

13.   Turn heat down to low-medium

14.   Stir in soup, milk, and sour cream

15.   Pour mixture over steaks

16.   Bake for 45 minutes

Baked Apples

This super simple recipe makes a great dessert or a side dish for pork. When I was growing up, we had baked apples for dessert at least once a month. You can get creative use, nutmeg, top with oats, or replace the sugar with syrup.
Baked Apples

Ingredients:
·         4 Apples (or one per person)

·         The juice of ½ a lemon

·         2 tbsp. Brown Sugar

·         1 tsp. Cinnamon

·         4 pats butter (one for each apple)


Directions: 
 1.       Preheat oven to 375ºF

2.       Cut out top part of apple core to make a well in each apple. Don’t remove the entire core.

3.       Sprinkle with lemon juice

4.       Place apples in baking dish

5.       Mix sugar and cinnamon

6.       Fill Apple wells with sugar mixture

7.       Place pat of butter into wells of each apple

8.       Bake for 50 minutes

Donna's Barbecue Sauce

Making your own barbecue sauce is so much better than the very sugary and processed stuff you buy in the store. It also allows you to be creative and lean toward your own likes and dislikes. Following is a very basic recipe. You can substitute, omit, or add your own ingredients. For instance, try maple syrup, grape jelly, or sugar instead of honey, or double up on the mustard and leave out the garlic. it's really up to you.

Donna’s Barbecue Sauce

INGREDIENTS:

·         1 6 oz. can tomato paste

·         1 tsp. vinegar

·         1 clove garlic, minced

·         2 tbsp. Worcestershire sauce

·         1 tsp. salt

·         1 tbs. mustard

·         1 tsp. chili powder

·         1 tsp. paprika

·         1 dash cayenne pepper

·         1 tbsp. honey

DIRECTIONS:

1.       Combine ingredients in sauce pan

2.       Cook on low heat 15-20 minutes

Frosted Cranberries

These Cranberries look amazing and taste even better
There are numerous festivities to attend this time of year. Take along this simple yet stunning sparkling sweet treat that will be the hit of the party.

Frosted Cranberries

Ingredients:
  ·         2 cups cranberries

·         ¼ cup sugar

·         1 cup wine[i]

·         ½ cup large grain sugar

·         ½ cup granulated sugar

Directions:
 1.       Wash cranberries and set aside in glass bowl

2.       Put ¼ cup sugar and wine into saucepan

3.       Heat over medium heat until sugar dissolves, do not boil

4.       Let syrup cool

5.       Pour cooled syrup over cranberries

6.       Refrigerate for at least 1 one hour or overnight

7.       Drain cranberries

8.       Toss with large grain sugar

9.       Place coated cranberries flat on a baking sheet to dry for 1 hour

10.   Toss with granulated sugar

11.   Allow to dry



[i] You can substitute water and make a simple syrup rather than a wine syrup, use 2 cups sugar instead of ¼ cup sugar

Bleu Cheese Dressing

You won't believe how easy it is to make your own blue cheese dressing. You do not have to have the bottled dressing filled with preservatives and chemicals

Bleu Cheese Dressing

Ingredients:
  ·         ‎1/2 cup sour cream

·         1/4 cup buttermilk

·         1/4 cup blue cheese crumbles

 

Directions:
1.      Mix sour cream and buttermilk together until smooth

2.      add blue cheese crumbles

3.      let sit for about 15 min

4.      Stir and serve.

Welsh Rarebit

Welsh Rarebit has no rabbit in it! The story goes that the name originates from an old the idea that a Welsh substitute is a poor one. So when meat was unavailable, people had Welsh Rabbit, which in essence is just cheese on toast. But it has become so much more than that. The recipe is a fairly simple cheese sauce poured over toast.

Welsh Rarebit

Ingredients:

·         ¼ cup butter

·         ¼ cup all purpose flour

·         Salt

·         Pepper

·         ¼ tsp dry mustard

·         ¼ teaspoon Worcestershire sauce

·         2 drops hot sauce (optional)

·         1 ½ cup milk

·         ½ pound Cheddar cheese, shredded

Directions:

  1. Melt the butter in a saucepan over low heat;
  2. blend in the flour, salt, pepper, mustard, Worcestershire sauce, and hot pepper sauce
  3. Continue cooking and stirring until the mixture is smooth and bubbly
  4. Remove from heat; gradually stir in the milk; return to heat and stir continually until the mixture comes to a boil.
  5. Melt the Cheddar cheese into the mixture in small portions until completely incorporated.
  6. Remove from heat.
 

Serve over English Muffins or Toast

Asparagus Soup

This soup is so delicious and surprisingly easy to make. It is a nice addition to a romantic dinner or even if you just want to "fancify" your meal.
Asparagus Soup

 

INGREDIENTS:

·         1 asparagus chopped to about 1 cup

·         ½ Onion chopped

·         1 tbsp. lemon juice

·         16 oz. Vegetable broth, divided

·         1 tbsp. butter[1]

·         1 tbsp. flour

DIRECTIONS:

1.       In a soup pot combine asparagus, onion, lemon, and 7 oz. broth

2.       Bring to a boil, simmer for 5 minutes

3.       Put this mixture in a blender and blend until smooth

4.       In the soup pan, melt butter over medium high heat

5.       Add flour and form a roux

6.       Slowly add remaining broth and stir ‘til smooth

7.       Slowly pour blended asparagus into roux mixture while stirring

8.       Reduce heat and simmer until ready to serve



[1] For a vegan alternative make the roux using vegetable broth as follows:

1.       Heat 1 oz. vegetable broth to boil

2.       Stir in 1 tbsp. flour until smooth

Peanut Butter Sweet Potatoes

I got this recipe from my Grannie Fannie Miller Campbell. It is super easy and it tastes great. This is a good idea for Thanksgiving and other holiday meals, Sunday Dinner or any dinner during fall.

Peanut Butter Sweet Potatoes

INGREDIENTS:

·         4 medium sweet potatoes

·         2/3 cup milk

·         ½ cup peanut butter

·         ¼ tsp. salt

·         Pepper to taste

·         1/3 cup chopped salted peanuts

DIRECTIONS:

1.    Preheat Oven to 400ºF

2.   Bake potatoes for 45 minutes (or until tender)

3.   Split lengthwise, scoop out potato

4.   Mash thoroughly and beat in milk, peanut butter and salt and pepper

5.   Spoon into casserole dish

6.   Sprinkle with peanuts

7.   Return to oven for 10 more minutes

Aunt Sarah's Chicken Bake

What's for dinner tonight? This simple one pan chicken casserole.
Aunt Sarah’s Chicken Bake

INGREDIENTS:

Cooked and de-boned chicken in pieces

1 can cream of chicken soup

1 can cream of celery soup

½ bag cornbread dressing

1 cup chicken broth

 

 

DIRECTIONS:

Lay chicken in bottom of baking dish

Mix cream soups and broth together and pour over chicken

Layer dressing over soups

Cover

Bake at 350 for 40 minutes

Remove cover for last 10 minutes
