Cheesy Shrimp Soup
INGREDIENTS:
· ¼ cup butter, divided
· ¼ cup flour
· 1 tbsp. wine vinegar
· 1 onion, chopped
· 1 clove garlic, minced
· 1 lb. small shrimp, peeled, cleaned without tail
· 4 cups cold milk
· 2 cups cheddar cheese, shredded
· ½ cup gorgonzola cheese
· ¼ cup parmesan cheese grated
DIRECTIONS:
1. Sauté onions and garlic in 1 tbsp. butter
2. add the shrimp and sauté
3. Melt the rest of the butter in a pot and add vinegar and flour to make a roux
4. Slowly add milk stirring constantly
5. Once milk is slightly thickened add cheeses and continue stirring constantly for several minutes
6. Do not boil
7. Add shrimp, onions and garlic
8. Simmer for 30 minutes stirring often
Serve with croutons to add some texture
