Eggplant Patties
INGREDIENTS:
· 1 medium eggplant pared and cubed
· 1 ¼ cup Ritz cracker crumbs (about 1 sleeve)
· 1 ¼ cups shredded sharp cheddar cheese
· 2 eggs slightly beaten
· 2 tbsp. snipped parsley
· 2 tbsp. sliced green onion
· 1 clove garlic, minced
· ½ tsp. salt
· 1/8 tsp. pepper
· 2 tbsp. cooking oil
DIRECTIONS:
1. In covered saucepan cook eggplant in boiling water until tender (about 5 minutes)
2. Drain well
3. Mash
4. Stir in crumbs, cheese, eggs, parsley, onion, garlic, salt and pepper
5. Shape into 8 patties about 3 inches in diameter
6. Cook in hot oil about 3 minutes on each side ‘til golden brown
