Caramel Cresnickerdoodles

This recipe is a delightful twist on the snickerdoodle cookie. It is amazingly easy to make and decadently indulgent to enjoy.
Caramel Cresnickerdoodles


Ingredients:

·         1 package of crescent rolls

·         20 Caramel Candies (the chewy kind).

·         1 cup of Cinnamon/Sugar, blended to your taste.

Directions:

1.       Wash your hands

2.       Preheat oven to 350

3.       Separate crescent roll dough and cut each separate piece in two

4.       Wrap dough gently but snuggly around one caramel.

5.       Roll it in the Cinnamon Sugar.

6.       Place them onto a baking sheet approx. 1″ apart.

7.        Bake at 350 degrees for about 12 minutes, or until they’re firm and slightly puffy.

8.       Let them cool for just a few minutes, but not too long.

Serve warm

Try it with ice cream or whipped cream

Snickerdoodles

Snickerdoodles are a popular and easy cookie that I enjoy at Christmas time. 


Ingredients:

·         1 cup butter

·         1 ½ cups white sugar

·         2 eggs

·         2 3/4 cups all-purpose flour

·         2 tsp baking powder

·         ½ tsp salt

plus
 

·         2 tbs. white sugar

·         2 tsp ground cinnamon

Directions:

1.    Preheat oven to 375 degrees F

2.    In a medium bowl, cream together the shortening and 1 1/2 cups sugar.

3.    Stir in the eggs.

4.    Sift together the flour, baking powder, and salt; stir into the creamed mixture until well blended.

5.    In a small bowl, stir together the 2 tablespoons of sugar, and the cinnamon.

6.    Roll dough into walnut sized balls, then roll the balls in the cinnamon-sugar.

7.    Place them onto an unprepared cookie sheet, two inches apart.

8.    Bake for 8 to 10 minutes in the preheated oven. Edges should be slightly brown. Remove from sheets to cool on wire racks.

Florida Orange Cake

My Nana Eva Boam lived in England but she loved to visit us in Florida and she always took advantage of the orange and grapefruit trees in our back yard.
While the majority of the country freezes during winter, in Florida we are still soaking up the sunshine. How about a touch that sunshine in your dessert? Try this simple cake recipe.


Florida Orange Cake

INGREDIENTS:

Cake:

·         1 package yellow cake mix

·         1 cup orange juice

·         3 eggs

·         1/3 cup water

·         1/3 cup vegetable oil

·         Frosting:

·         1 (8 ounce) package cream cheese, softened

·         1/4 cup butter, softened

·         1 tablespoon orange marmalade

·         3 cups confectioners' sugar

 

 

DIRECTIONS:

Cake:

 

1.    Preheat oven to 350ºF

2.   In a large mixing bowl, combine the dry cake mix, orange juice, eggs, water and oil

3.   Beat on low speed for 30 seconds

4.   Beat on medium for 2 minutes

5.   Pour into a greased 13-in. x 9-in. x 2-in. baking pan

6.   Bake for 30-35 minutes or until a toothpick inserted near the center comes out clean

7.   Cool on a wire rack

 

Frosting:

1.    In a small mixing bowl, beat the cream cheese and butter until smooth

2.   Beat in orange marmalade and confectioners' sugar

3.   Spread over cake

Vegan Cheesecake

Vegans, You can have your cheesecake and eat it too! This recipe will give you a delicious dessert.
Vegan Cheesecake

Ingredients: 
 Crust:
  ·         1 cup sifted whole wheat flour

·         ¼ cup Stevia in the Raw or Sugar in the Raw

·         1 teaspoon lemon zest

·         ½ cup applesauce

 

Filling: 
  ·         20 ounces plain cultured soy

·         1/8 teaspoon vanilla extract

·         ½ teaspoon lemon zest

·         1 ½ tbsp. whole wheat flour

·         1/8 teaspoon salt

·         5/8 cup Stevia or Sugar in the Raw

·         ½ cup vegan egg substitute or ¼ cup applesauce

·         2 tablespoons Coconut Milk

 

Directions:  

Crust:
1.    Preheat oven to 400º F

2.    Combine 1 cup of the flour, sugar and grated lemon zest.

3.    Stir in the applesauce and vanilla

4.    Pat 1/3 of the dough into the bottom of one 9 inch spring form pan with the sides removed.

5.    Bake for 6 minutes. Let cool then spray sides of pan with vegetable oil spray and attach to bottom. Pat the remaining dough evenly on the sides to a height of 2 inches

 

Filling:
1.    Preheat oven to 500º F

2.    Beat together yogurt, vanilla and lemon zest.

3.    Mix 1 ½ tablespoons flour, 1/8 teaspoon salt and the remaining sugar together. Gradually blend this mixture into the cultured soy mixture

4.    Slowly add the egg substitute or applesauce while beating

5.    Gently stir in the coconut milk

 

Pour into prepared pie crust

6.    Bake at 500º for 5 to 8 minutes or until top edge of crust is golden.

7.    Reduce heat to 200ºF and continue baking for 1 hour.

8.    Remove cake from oven and cool in pan for at least 3 hours.

9.    Remove sides of pan to serve

Debbie’s Delicious Scrumptious Cream Cheese Cupcakes


INGREDIENTS:

·         2 8oz. packages cream cheese, softened

·         2 eggs

·         1 tsp. vanilla

·         ¾ cup sugar

·         1 tbsp. lemon juice

·         12 vanilla wafers

·         Fruit topping (Cherry, blueberry or strawberry works best)

 

DIRECTIONS:

1.    Preheat oven to 375ºF

2.   Use blender to mix, cream cheese, eggs, vanilla, sugar and lemon juice until smooth

3.   Line cupcake pan with paper cupcake cups

4.   Place wafer in the bottom of each cup

5.   Pour mixture evenly over the wafers to make 12 cupcakes

6.   Bake for 20 minutes

7.   Cool completely

8.   Pour topping on and serve

Chai Cupcakes

I enjoy the exotic taste of chai. What an amazing mix if Indian spices. Imagine it in a cupcake. Here is the recipe inherited from a cousin. 

 Chai Cupcakes
 

INGREDIENTS:

·         1 cup milk

·         2 black tea bags

·         2 chai tea bags

·         ½ cup plain yogurt

·         ¾ cup white sugar

·         ¼ cup canola oil

·         1 teaspoon vanilla extract

·         1 cup all-purpose flour

·         ¼ teaspoon baking soda

·         ½ teaspoon baking powder

·         2 teaspoons ground cinnamon

·         ½ teaspoon ground ginger

·         ¼ teaspoon ground cloves

·         ½ teaspoon salt

·         1 pinch ground black pepper

 

DIRECTIONS:

 

1.    Preheat oven to 350ºF

2.    Grease a 12 cup muffin pan or line with paper baking cups.

3.    Heat the milk in a saucepan until almost boiling

4.    Remove from the heat and add the black tea and chai tea bags

5.    Cover and let stand for 10 minutes. Wring out the tea bags into the milk and discard bags

6.    In a medium bowl, whisk together the tea-milk, yogurt, sugar, oil and vanilla

7.    In a large bowl, sift together the flour, baking soda, baking powder, cinnamon, ginger, cloves, salt and pepper

8.    Pour the wet ingredients into the dry mixture and stir until blended

9.    Spoon the batter into the prepared cups, dividing evenly

10. Bake in the preheated oven until the tops spring back when lightly pressed, 20 to 25 minutes

11. Cool in the pan set over a wire rack. When cool, arrange the cupcakes on a serving platter. Frost with desired frosting (vanilla or cream cheese is great!)

Chocolate Cobbler

You will not believe how simple this scrumptious dessert is to make.
Chocolate Cobbler


Ingredients

 

·         2 sticks of Butter, melted

·         2 ¼ cup Sugar, divided

·         1 ½ cup Self-rising flour

·         1 TSP Vanilla

·         ¾ cup Milk

·         1 Chocolate Bar broken into pieces or ½ cup chocolate chips

·         6 TBSP Cocoa Powder

·         2 cups Boiling Water

 

Directions

 

Directions

 

1.   Preheat oven to 350ºF

2.  Mix together  1 ¼ cups of sugar, flour, vanilla and milk

3.  Put the melted butter into a 9x13 baking dish

4.  Pour the flour mixture over the butter- DO NOT STIR

5.  In a separate bowl mix together the cocoa and remaining sugar

6.  Top with chocolate

7.  Sprinkle cocoa/sugar mixture on top of batter- DO NOT STIR

8.  Pour the 2 cups of boiling water on top of that DO NOT STIR

9.  Bake for 30-45 minutes

Cheesecake Pastry Bars

Cheesecake Pastry Bars are great to bring to your holiday party or a delicious and easy dessert for your family dinner.

Ingredients: 

·         2 cans Crescent Rolls 

·         2 – 8 ounce packages cream cheese, softened 

·         1 cup and ½ cup sugar, divided 

·         1 tsp vanilla extract 

·         ½ cup butter, melted 

·         1 tbsp. ground cinnamon 

Directions: 

1.       Preheat oven to 350ºF

2.       Unroll 1 can of crescent rolls, and lay flat in the bottom of a 9-inch ×13-inch baking pan. Pinch any seams closed. 

3.       Combine cream cheese, 1 cup sugar and vanilla in a medium bowl with electric mixer until combined and smooth. 

4.       Spread cream cheese mixture over top of the crescent roll

5.       Unroll and layer second can of crescent rolls on top of the cream cheese mixture. Make sure all seams are closed. 

6.       Pour the melted butter over the top. 

7.       Combine the remaining sugar and tablespoon of cinnamon and sprinkle evenly on top of butter. 

8.       Bake for 30 minutes until top is golden brown. 

9.       Let cool for about 20 minutes and then put in refrigerator for at least one hour

10.   Cut into squares

Lori's Forgotten Chicken

Today, not everyone has time to stand in the kitchen for an hour or more preparing dinner. So today's recipe is one that takes about  minutes to prepare and still gives you a healthy, tasty dinner. This recipe is a family recipe form my cousin Lori Silver and can be found on page 78 of my cookbook Comfort Food from the Campbell Family
Lori’s Forgotten Chicken

 

INGREDIENTS:

1 can cream of celery soup

1 can cream of mushroom soup

1 package onion soup mix

1 cup uncooked rice

1 chicken in pieces

 

DIRECTIONS:

Preheat oven to 325°F

Mix soups, onion mix, and rice and put in baking dish

Top with chicken

Cover with foil

Bake for 2 hours

Extremely Chocolate Chip Cookies. Chocolate is good for the soul

 

INGREDIENTS:

·         1 cup butter, softened

·         1 ½ ups white sugar

·         2 eggs

·         2 teaspoons vanilla extract

·         2 cups all-purpose flour

·         2/3 cup cocoa powder

·         ¾ tsp. baking soda

·         ¼ tsp. salt

·         2 cups semisweet chocolate chips

·         ½ cup milk chocolate chips

 

DIRECTIONS:

1.    Preheat oven to 350°F

2.   In large bowl, beat butter, sugar, eggs, and vanilla until light and fluffy

3.   Combine the flour, cocoa, baking soda, and salt

4.   Stir into the butter mixture until well blended

5.   Mix in the chocolate chips

6.   Drop by rounded spoonfuls onto ungreased cookie sheets

7.   Bake for 8 to 10 minutes
