Easy Cheesy Chicken Dinner

This is a one-dish baked Easy Cheesy Chicken Dinner. Prepare it put it in the oven, and leave it.

Ingredients:
  ·         4 Chicken Breasts

·         1 cup White Rice or Brown Rice

·         2 cups Spinach, chopped

·         4 oz. Creamed Cheese Softened

·         4 oz. crumbled Bleu Cheese

·         4 oz. Cheddar Cheese

·         2 TBS Butter

·         ½ cup Bread Crumbs

·         1 tsp. Seasonings of choice (I used Sage Thyme, Cumin, Oregano)

·         Salt and Pepper

Directions:
1.       Preheat Oven to 400°F

2.       Cook Rice per directions

3.       In saucepan over low-medium heat stir together Butter, Cream Cheese until smooth (about 10 minutes)

4.       Stir in remaining cheeses and turn off heat

5.       Lay Rice and Spinach in baking pan side by side, rice should take up most of the space

6.       Cover with most of Cheese Sauce

7.       Lay Chicken over the Rice and Spinach

8.       Pour remaining sauce over Chicken

9.       Sprinkle Chicken with Bread Crumbs

10.   Cover and Bake for 45 minutes or until chicken is fully cooked.

Grandpa's Favorite Swiss Chicken

This is an easy and quick to prepare pressure cooker recipe given to me by my cousin. Grandpa told her this was his favorite chicken.


Grandpa’s Favorite Swiss Chicken

INGREDIENTS:

·         ¼ cup flour

·         1 lb. chicken

·         8 oz. tomato sauce

·         8 oz. diced tomatoes

·         Salt/Pepper to taste

DIRECTIONS:

1.    Mix flour with salt and pepper and other seasonings to taste

2.   Coat chicken pieces in seasoned flour

3.   Place into pressure cooker cover with diced tomatoes and tomato sauce

4.   Cover and seal cooker, cook for 10 minutes over med/high heat

*You can layer the chicken on top of small potatoes in the pressure cooker and add 3 minutes to cook time

This is my cousin Adrienne's very simple recipe for dinner

Adrienne’s Santa Fe Chicken

 

INGREDIENTS:

·         4 pieces of chicken

·         1 jar salsa

·         2 cups rice, cooked

·         1 can black beans

·         1 can Mexi-corn

 

DIRECTIONS:

1.    Brown chicken in large skillet

2.   Add remaining ingredients

3.   Heat through

Cheesecake Pastry Bars

Cheesecake Pastry Bars are great to bring to your holiday party or a delicious and easy dessert for your family dinner.

Ingredients: 

·         2 cans Crescent Rolls 

·         2 – 8 ounce packages cream cheese, softened 

·         1 cup and ½ cup sugar, divided 

·         1 tsp vanilla extract 

·         ½ cup butter, melted 

·         1 tbsp. ground cinnamon 

Directions: 

1.       Preheat oven to 350ºF

2.       Unroll 1 can of crescent rolls, and lay flat in the bottom of a 9-inch ×13-inch baking pan. Pinch any seams closed. 

3.       Combine cream cheese, 1 cup sugar and vanilla in a medium bowl with electric mixer until combined and smooth. 

4.       Spread cream cheese mixture over top of the crescent roll

5.       Unroll and layer second can of crescent rolls on top of the cream cheese mixture. Make sure all seams are closed. 

6.       Pour the melted butter over the top. 

7.       Combine the remaining sugar and tablespoon of cinnamon and sprinkle evenly on top of butter. 

8.       Bake for 30 minutes until top is golden brown. 

9.       Let cool for about 20 minutes and then put in refrigerator for at least one hour

10.   Cut into squares

Crispy Parmesan Edamame

Easy and tasty this snack is also very good for you! It is vegetarian, rich in protein and yummy! Perfect to bring to a party or munch on while you watch a movie with the family.

Crispy Parmesan Edamame


Ingredients:

12 oz. package frozen shelled edamame (soy beans)

1 TBS olive oil

1/4 cup grated parmesan

Salt/Pepper to taste

Directions:

Preheat oven to 400ºF degrees

Rinse edamame under cold water to thaw

Place edamame in 9X13 baking pan

Drizzle with Olive Oil and sprinkle with cheese

Optional add salt/pepper to taste

Bake in preheated oven until cheese is crispy and golden approximately 15 minutes

And if you want it to be vegan, just leave off the cheese! :D

Cornish Game Hen

Cornish Game Hen doesn’t have to be some difficult thing to make. It is actually very easy and makes dinner an experience as well as a meal. Are you looking for just the right dinner party meal? Are you making a romantic dinner? Cornish Game hen is simple and doesn’t fail to impress.

I personally like to split one hen between two people because my parents have smaller appetites but I will include recipes for split or whole birds.

Split Cornish Game Hen over Dressing

Ingredients:
  ·         1 Cornish game hen

·         2 tbsp. and 2 tbsp. Butter, divided

·         Dash Rosemary, ground

·         Dash Sage, ground

·         Dash Thyme, ground

·         ¾ cup Chicken broth

·         1 cup Bread, cubed

·         ½ onion, chopped

·         1 piece of celery, chopped

Directions:

1.       Preheat oven to 350ºF

2.       Place cubed bread in one layer on baking sheet – use any kind of bread or a mixture of breads.

3.       Bake for 10 minutes or until dry and golden.

4.       Mix together rosemary, sage and thyme

5.       Combine 2 tbsp. butter, ½ seasoning mix, bread cubes, onions, celery, and broth in baking dish

6.       Cut hen in half

7.       Spread butter on skin side and under skin of the hen

8.       Rub remaining season on skin side

9.       Place on top of dressing

10.   Place in oven and bake for 45 minutes or until internal temperature reaches 165º


OR
Stuffed Cornish Game Hen

Ingredients: ·         2 Cornish Game Hens

·         ½ tsp Rosemary

·         ½ tsp Thyme

·         ½ tsp Sage

·          4 tbsp. and 4 tbsp. Butter, divided

·         ¾  cup Chicken broth

·         1 cup Bread, cubed

·         ½ onion, chopped

·         1 piece of celery, chopped

Directions: 1.       Preheat Oven to 350ºF

2.       Place cubed bread in one layer on baking sheet – use any kind of bread or a mixture of breads.

3.       Bake for 10 minutes or until dry and golden.

4.       Decrease oven temp to 325ºF

5.       Mix together rosemary, sage and thyme

6.       Combine 4 tbsp. butter, ½ seasoning mix, bread cubes, onions, celery, and broth in bowl

7.       Rub butter and remaining seasoning mix onto the skin of the hens and ender the skin of the hens.

8.       Stuff the birds with dressing and place remaining mixture in baking dish or roasting pan

9.       Place hens in baking dish or roasting pan over dressing and cover

10.   Bake for 1 ½ hours

11.   Remove cover increase oven temp to 450ºF and bake an additional 10 minutes for a golden crispier skin

12.   Make sure inner temp is 165ºF

If you don’t want the bread stuffing you can stuff it with a vegetable mix something like root vegetables. Parsnips, carrots, and celery are delicious roasted with the hens.

Aunt Sarah's Chicken Bake

What's for dinner tonight? This simple one pan chicken casserole.
Aunt Sarah’s Chicken Bake

INGREDIENTS:

Cooked and de-boned chicken in pieces

1 can cream of chicken soup

1 can cream of celery soup

½ bag cornbread dressing

1 cup chicken broth

 

 

DIRECTIONS:

Lay chicken in bottom of baking dish

Mix cream soups and broth together and pour over chicken

Layer dressing over soups

Cover

Bake at 350 for 40 minutes

Remove cover for last 10 minutes
