Giblet Gravy
INGREDIENTS:
· ¼ cup turkey giblets, chopped
· 3 tbsp. oil
· 3 tbsp. turkey drippings
· 3 tbsp. all-purpose flour
· 2 ½ cups turkey broth (can substitute chicken broth)
· ½ tbsp. sage, chopped
· ½ tsp. ground black pepper
· Salt to taste
DIRECTIONS:
1. Fry giblets in oil over medium heat about 5 minutes
2. In a separate pan, heat turkey drippings in a large skillet over medium heat; gradually add flour and stir until smooth
3. Slowly whisk in turkey stock until blended and smooth
4. Stir in giblets and season with sage, pepper, and salt
5. Bring to a boil
6. Reduce heat, and simmer for 8 to 10 minutes, or until thickened
