Grown-up Mac-n-Cheese
INGREDIENTS:
· 16 oz. uncooked elbow macaroni
· 2 cups shredded sharp cheddar cheese
· ¼ cup butter
· ½-1 tsp horseradish
· 2 ½ tbsp. all-purpose flour
· 8 oz. cream cheese, softened
· ½ cup grated Parmesan cheese
· 2 cups milk
DIRECTIONS:
1. Preheat oven to 425ºF
2. Cook macaroni according to the package directions. Drain.
3. In a saucepan, melt butter over medium heat
4. Stir in horseradish
5. Stir in enough flour to make a roux
6. Add milk to roux slowly, stirring constantly
7. Stir in cream cheese
8. Stir in cheddar and Parmesan cheeses
9. Cook over low heat until cheese is melted and the sauce is a little thick
10. Put macaroni in large casserole dish, and pour sauce over macaroni
11. Sprinkle Blue cheese over the top
12. Bake for 30 minutes
