Parmesan Encrusted Pork Tenderloin
INGREDIENTS:
· 1 lb. pork tenderloin
· 3 tbsp. breadcrumbs
· 2 tbsp. parmesan cheese, grated
· ½ teaspoon salt
· 1 small onion, chopped finely
· 1 garlic clove, minced
· Fresh ground black pepper
· Olive oil, as needed
DIRECTIONS:
1. Cut tenderloin crosswise into 8 slices, about 1 inch thick
2. Flatten each slice to ½ inch thickness
3. Combine crumbs, cheese, salt, and pepper
4. Dredge pork slices to coat
5. Add oil to a large heavy skillet
6. Sauté onion and garlic
7. Add meat lower heat to medium and fry about 8 minutes
