Split Pea Soup
INGREDIENTS:
· 2 cups dried split peas
· Ham bone or ½ stick butter (optional)
· 1 cup ham, diced (optional)
· 1 onion, chopped
· 3 carrots, sliced
· 1 potato, diced
· 2 cups chicken or vegetable broth
· 3-4 cups water (depending on the desired thickness)
· Salt and pepper
· Dash of hot sauce (optional)
DIRECTIONS:
1. Pick through and wash peas
2. Put all ingredients in crock pot
3. Cook on low for 6-8 hours
OR
1. Put all ingredients in large pot bring to boil
2. Reduce heat
3. Cook on low for 1-2 hours
If you want vegetarian, leave out the ham and use vegetable stock or water instead of chicken broth.
to make it Vegan leave out the butter. It doesn't need the fat, especially if you add some of your favorite seasonings.
